Tips
1. Toast the Brioche
Lightly toast the brioche slices until golden.
This adds texture and prevents the bread from getting soggy once assembled.
2. Cook the Bacon
Cook bacon in a skillet until crispy or to your preferred doneness.
Set aside on a paper towel to drain excess fat.
3. Make the Scrambled Eggs
Whisk eggs with a pinch of salt and pepper.
Heat a nonstick pan over low heat and add a small amount of butter.
Pour in the eggs and cook low and slow, gently stirring for a creamy, custard‑like texture.
Remove from heat just before fully set — they’ll finish cooking from residual heat.
Optional: Add chives or melt a slice of cheese over the eggs.
4. Assemble the Sandwich
Place the bacon onto one toasted brioche slice,
Spoon the creamy scrambled eggs over the bacon,
Add a dash of hot sauce if desired,
Top with the second brioche slice
5. Serve
Serve warm and enjoy the perfect balance of crispy, buttery, and soft breakfast goodness.
