- Lamb Mince
- Fresh garlic

- Chilli Halloumi Cheese
- Dijon or Yellow Mustard
- Mayonnaise
Tips
1. Season the Lamb
In a bowl, combine the lamb mince with minced garlic, oregano, thyme, smoked paprika, cumin, olive oil, salt, and pepper.
Mix gently—overmixing can toughen the meat.
Shape into patties
2. Let the Flavors Develop
Cover and let the seasoned lamb rest for at least 30 minutes in the fridge.
This helps the spices fully infuse the meat and improves the texture during cooking.
3. Cook the Lamb Patties
Heat a grill pan or skillet over high heat.
Cook the lamb patties for 3–4 minutes per side, or until a dark, flavorful crust forms.
Remove from heat and let rest briefly.
4. Fry the Chilli Halloumi
In the same pan (or a clean one), add a light drizzle of olive oil.
Fry the chilli halloumi slices for 1–2 minutes per side until golden and lightly crisp.
5. Sauté the Veggies (Optional)
You can leave them raw for crunch or soften them slightly:
Sauté red onion and green pepper in a bit of oil until lightly charred but still crisp.
Or keep them raw for a fresher bite.
6. Build the Stack
Start with a base of lettuce.
Add the lamb patty.
Top with chilli halloumi, red onion, and green pepper.
In a small bowl, mix mayonnaise with Dijon or yellow mustard to taste.
Drizzle or spread the mustard-mayo over the top.
Serving Suggestions
Add cucumber, tomato, or pickled chilies for extra brightness.
Serve alongside roasted potatoes, Greek salad, or herb couscous.
